Healthy Recipe: Spicy Asian Chicken Salad Lettuce Wraps

Looking for a healthy meal in a hurry? Keep it light with this quick recipe that offers plenty of flavor and a little kick.

Serves four

Ingredients

½ cup light mayonnaise

1 ½ teaspoons Dijon mustard

1 teaspoon Chinese-style chili sauce

2 ½ ounces canned salt-free white meat chicken

8 ounces water chestnuts (drained and chopped)

4 sliced green onions

2 tablespoons unsalted nuts 

¼ teaspoon ground black pepper

2 teaspoons lime juice or juice from one fresh Lime

12 lettuce leaves (use a lettuce capable of holding the salad. For example, iceberg, leaf or Boston)

Directions

In a medium bowl, combine mayonnaise, mustard and chili sauce. Stir in the chicken, water chestnuts, green onion, nuts, pepper and lime juice. Spoon the mixture equally into the lettuce leaves, then serve.
