Healthy Recipe: Coconut Poached Chicken

  • 3/4 cup of Jasmine rice
  • 2 chicken breasts
  • 1-14 oz can of lite coconut milk
  • 1/4 tsp  lemongrass powder
  • 1 tbsp sesame oil
  • 1 tbsp olive oil
  • 1 tbsp lite soy sauce
  • Juice of 1 lime
  • 1/2 cup red cabbage, shredded
  • 1/4 cup carrots, shredded
  • 1 tbsp scallion, cut on bias
  • 1 tsp basil, chopped
  • 1 tsp mint, chopped


Poach chicken in coconut milk and lemongrass. Bring to a rolling boil on top of stove, cover and finish in oven for 1 hour. Turn chicken over 30 minutes into the poaching process. Hold and shred when ready to plate.

Cook rice in 1 & ¼ cups of salted water. Fluff and hold.


Whip 3 tbsp coconut milk, sesame & olive oils, soy sauce and lime juice with a food processor and hold.


Sauté shredded red cabbage and carrots al dente. Add rice and toss half of dressing into the mixture. Finish with shredded chicken and remainder of dressing. Top with mint and basil.
