Healthy Recipe: Sautéed Tilapia Basil Gremolata
- 1 - 6 oz. Thawed tilapia
- 4 oz. Whole cherry tomatoes
- 4 oz. Fresh spinach
- ½ tsp Oven toasted almonds, ground fine in a food processor
- ½ tsp Grated parmesan
- 1 tsp Lemon juice
- ½ clove Fine chopped sautéed garlic
Mix together Gremolata.
Season fish with a pinch of salt and pepper and sauté 3-4 minutes each side on medium heat until fish is opaque.
Sauté tomatoes with a pinch of Gremolata until skins wrinkle; about 2-3 minutes. Add spinach to the same sauté pan and season with a pinch of salt and pepper.
Place spinach and tomatoes on plate. Set cooked tilapia on vegetables and top with remainder of Gremolata.
